Now usually, you might hear someone say, "Mmm, chocolate cake...." or Mmm, ice cream....", but how many times do you hear someone say, "Mmm, kale chips....."? Well you heard it here! My family has discovered kale chips and yes, even my potato chip lovin' kids gobble them up. I have been on a healthy eating kick for some time now and I am always looking for healthy snacking options. Kale chips definitely fit the bill. 1 head of Kale torn into 3 inch pieces (wash first--thank goodness for salad spinners!) * You can also buy it bagged already in small pieces and washed, but the pieces tend to be smaller and more useful for salad. It will work though.
2-3 Tablespoons olive oil
Salt ( I used sea salt)
Grated Parmesan cheese
Heat oven to 300 degrees. Spread your kale onto rimmed cookie sheets in a single layer. Drizzle olive oil over the kale and toss to coat. Sprinkle with a little salt then put it in the oven for 20 minutes. Sprinkle Parmesan cheese over it and serve it up.

I believe that they were gone within about 20 minutes of baking! So next time you have a craving for chips, make up a batch of kale chips instead. Your mouth and your body will thank you!
