Mexican Beef for Burritos (or tacos or taco salad)
Serves 6, but can by doubled, tripled etc. for a party
1 lb. lean ground beef
1/2 clove garlic, crushed
1 (4 oz) can chopped mild green chiles
1 (16 oz) can tomatoes, undrained
1 teaspoon salt
1/8 teaspoon ground pepper
In a large skillet, brown ground beef with the garlic and drain. Add green chiles, tomatoes, salt and pepper and mix. Cook over low heat uncovered for 30 minutes.
Just add your shredded lettuce, cheese, chopped tomatoes, avocados, sour cream, salsa, or whatever you like with your burritos. Roll in a tortilla or add to your taco shells and enjoy!
Corn is in season in Florida at the moment, so I will also make this tasty corn salad (thanks to my sis!). It is perfect for a Mexican fiesta!
Corn Salad
Serves 8
2 tablespoons olive oil
1 tablespoon lime juice
1/4 cup chopped cilantro
1/4 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups corn kernels (5 ears cooked first or frozen corn can also be used--defrost first)
1 1/2 cup diced avocado (cut into 1/2 inch pieces---about 1 1/2 avocado)
1 pint cherry tomatoes, halved
1/2 cup finely diced red onion
In a large bowl, whisk olive oil, lime juice, cilantro and salt and pepper. Add corn, avocado, tomatoes and onion. Toss. Serve at room temperature.
Oh, and you can't forget the libations. Corona and lime is great but I am not a beer drinker. Margaritas are always in order, but I love Sangria! I have a recipe with a little twist because it is a White Sangria (also courtesy of my sister!). It is SO GOOD!!! It is best to make it a little ahead of time so everything has time to gel so to speak.
White Sangria
1 (750 ml) bottle dry white wine
1 cup thawed orange juice concentrate
1/3 cup thawed lemonade concentrate
1/3 cup thawed limeade concentrate
1 navel orange sliced
1 lemon sliced
1 lime sliced
3 cups club soda, chilled
